Aussie pizza chain releases controversial topping that could be deemed 'unAustralian'

A family-owned Australian pizza chain will today release one of its most controversial pizza toppings in 24 years of operation.

Bubba Pizza will today begin serving a kangaroo pizza.

This is either the most Australian pizza of all time or perhaps the most unAustralian.

Bubba Pizza's Damian Hopper tells nine.com.au the business wanted to release a range of Australian-inspired pizzas to wrap up 2025.

"We were sitting here one day eating an Aussie pizza, one of the most popular pizzas on the menu, but to me it's not very Aussie. It's bacon and eggs on pizza," he said.

"To me that's more of an English breakfast than an actual Aussie pizza. So we started running through a few ideas – cheese and Vegemite, then a Queenslander version.

"Then we thought, what about kangaroo?"

Kangaroo meat has become more commonplace in Australia and is even sold at Coles and Woolworths and other major grocery retailers.

Bubba Pizza has dubbed its kangaroo pizza the Bubbaroo. It includes the kangaroo mince, barbeque sauce and double bacon.

Hopper decided to go with minced kangaroo for the pizza.

"Kangaroo itself is quite lean. It's not an oily fatty meat," he said.

"The most common way of eating kangaroo is on the barbeque, so we got it all minced up and we put it on top of the pizza in the pizza oven, which is 300 degrees.

"It's nice and crispy and it works really well with all the other flavours."

There are two more pizzas in their latest Aussie-inspired range: The Happy Little Bubbamite, which features Vegemite and cheese, and The Queenslander with chicken, prawns and pineapple.

The Happy Little Bubbamite was a no-brainer for Bubba Pizza.

"Vegemite and cheese is one of the staples for kids growing up in Australia, Vegemite and cheese on toast," he said.

"And we actually found that a lot of people like to eat their pizza the next day, so we think you can have this for breakfast as well, sort of like a gourmet version of Vegemite on toast."

The Queenslander is a nod to the sunshine state's love of chicken and seafood.

"The prawns are all marinated in garlic and herbs, so it becomes a bit of a nice juicy tropical-flavoured pizza just in time for summer."

The Bubbaroo and The Queenslander cost $19 each, and The Happy Little Bubbamite is $16.

The new pizza range is available from today across all 17 Bubba pizza outlets in Victoria and South Australia, for a limited time only.

From the regular menu, Bubba Pizza's most popular pizza is Ham and Pineapple, followed by Pepperoni, and then it's a tie between Margarita, Meat Lovers and Barbeque Chicken.

"That's the same across any pizza shop. Pizza people are very set in their ways," Hopper said.

"That's why we like to just experiment and try different things and get different flavours."

This time last year Bubba Pizza released a controversial Ham and Orange Pizza, a nod to Italy's deep-rooted love of oranges.

"That one got a lot of people quite curious to come in and try," he said. "It never became a regular staple on the menu but every time we took it off the menu, people would always come in and want to try it.

"We just tell people now if you want to try one, just bring an orange in and we'll make it for you."

Hopper says his go-to variety is constantly changing, but at the moment his favourite is their Pepperoni pizza.

"We use continental Calabrese pepperoni from a local salami supplier. It's a little bit fatty but its got a lot of flavour," he said.

"We like to get it crisped up on the pizza and load it up as much as we possibly can.

"We even have the option to add hot honey on it if people want as well, which is starting to become a really popular ingredient for pizza, or some fresh basil.

"We do do our own pizza called the Hellboy, which is inspired by some trendy YouTube pizza pages from the USA that we like to watch. It's just basically a pepperoni with hot honey, fresh basil leaves, oregano and chili flakes on top. Pepperoni on steroids."
