Bakers Delight is making a major play for Australia’s booming gourmet sandwich market, opening its first pop-up deli in Melbourne to showcase the new Everything Sourdough range – one of its boldest moves in 45 years of operation.

Taking over a shopfront on Collingwood’s Smith Street across Saturday, October 17 and Sunday, October 18, the “Bakers Deli” will serve a limited-edition menu of custom sandwiches alongside bakery-themed drinks.

Created in collaboration with Australian spice brand Mingle Seasoning, the new Everything Sourdough lineup features sesame seeds, garlic, onion, and sea salt.

The range landed in bakeries nationwide on October 15.

The pop-up menu features five custom sandwich builds, including The Everything Reuben – pastrami, sauerkraut, Swiss cheese and special sauce on an Everything Sourdough Baguette – and The Cheesymite Remix, a gourmet sandwich twist on the brand’s iconic Cheesymite Scroll.

The event will also serve nostalgic drinks like finger bun iced lattes and iced matchas topped with colourful sprinkles.

Bakers Delight Chief Marketing Officer Jodi Murray-Freedman said the move reflects shifting Australian eating habits toward artisanal bakery options.

“After more than 45 years of baking for Australians, we’re doing something completely new with our first-ever sandwich deli,” she said.

“Sourdough and gourmet sandwiches are a huge part of how Australians eat today, and Bakers Deli is our way of celebrating our new Everything Sourdough range with a fun, delicious experience.“

The humble sandwich is undergoing a massive cultural reinvention across Australia, transforming from a desk-bound lunch box filler into one of the country’s most vibrant culinary crazes.

Driven by dense urban café cultures in cities like Melbourne and Sydney, the "gourmet sanga" boom has seen dedicated deli-style sandwich bars drawing long queues around block corners.

From Italian-style schiacciata loaded with mortadella and stracciatella, to slow-cooked beef birria dips and heavily layered Reubens served on sourdough, the humble slice of bread is now treated with the same culinary respect, technique and flair as fine-dining courses.

This has included the introduction of compact, small-footprint “metro” store model as part of its national expansion strategy, with a trial underway in Camberwell in Victoria.

Bakers Delight’s latest traditional store is in Nedlands Square, which opened in Western Australia last week.

David Christie, Bakers Delight Joint CEO, described this new store model as a "game-changer for our network".

"It's a lower-cost, high-efficiency format that delivers strong return on investment and opens the door to new locations and franchise opportunities," he said.

“The smaller, more affordable store design will allow for more franchise opportunities at a faster pace.”
