There's nothing we love more at 9Honey than a quick and easy trick that ups your dinner game without any hard work. Which is why the pressed rice salad bowl is a perfect addition to the 9Honey Kitchen Hacks that will make your life easier.

It's a simple trick that will take your rice from side dish to centrepiece, and adds a whole lot of fun into the bargain.

You can use any cooked rice for this trick, but today we're using Ben's Original microwave rice in the Mexican style, because it's got extra flavour already packed in, takes less than two minutes in the microwave and turns out of a bowl so beautifully. But any of the Ben's Original microwave rices work well — all you need to do is decide which extra salad ingredients will work with it.

The pressed rice salad hack take rice next level

The pressed rice salad hack that'll take your rice to the next level. Supplied

Ingredients:

  • Ben's Original Mexican rice x 2 (250g) packets
  • 2 x mini cucumbers, diced
  • ½ yellow capsicum, diced
  • 4 x radishes, diced
  • handful of fresh mint, shredded finely
  • handful fresh parsley, shredded finely
  • 2 tablespoons grated lemon rind
  • Juice of one lemon
  • pomegranate seeds
  • ¼ cup flaked almonds, toasted

Method:

  1. Grease a salad bowl that has a nice dome shape with some oil spray. Cook the rice as per the microwave instructions.
  2. Line the inside top of the bowl with some flaked almonds and pomegranate seeds. Mix the rest of the diced veggies, herbs, lemon rind, pomegranate seeds and almonds with the cooked rice and lemon juice to make a fresh and vibrant salad.
  3. Press the rice salad into the bowl firmly, then invert it onto a plate and it will turn out in a beautiful, decorative mound. Add extra herbs, nuts and garnishes on top and around the plate.
