9Honey Quarantine Kitchen cook-along: Two-ingredient flatbread

Jane de Graaff

Welcome to another episode of the 9Honey Quarantine Kitchen (watch it above)— the video series where we make the most of what's in your pantry right now to save both money and a trip to the shops. It's the great stay-at-home challenge of the COVID-19 pandemic; how do I make what I have go further? And we're here to help.

What are the staples we head out to the shops for most often? The ones that cause us to panic when we run out of them last minute? Off the top of my head, I'd say bread and milk... closely followed by wine. But that's a story for another time.

I can't help with the milk and wine, but I do have a clever and fun fix for when you're out of bread and want to delay a trip to the shops as long as possible because we're all working hard to #flattenthecurve, #stopthespread and #stayathome.

Enter: two ingredient flatbread.

You will have heard of it, but sometimes it's hard to believe in magic until you've actually seen it. Well, let me introduce you to the unicorn of kitchen hacks with this gem of a trick.

Yep, honestly — two-ingredient bread the whole family will love and that's ready in five minutes. Oh, did I mention that it's delicious and can even double as a cheat's pizza base? Well, now I've said that too. You'll never look back.

Check out the cook-along 9Honey Quarantine Kitchen video above to see it in action, and the recipe is below too.

This recipe calls for self-raising flour (which makes it nice and fluffy), but you can use plain flour if that's all you have. Or you can add a teaspoon of baking powder per every cup of plain flour and you will have your own homemade self-raising flour. There. That's just one more hack to add to the books.

I like to use this bread with a roast lamb filling or just topped with spiced salt or dukkah. But you can do whatever you like with it. My kids eat it smeared with avocado and fight for every last bit.

Method (or the rough guide)

  1. In a bowl combine the yogurt and flour and bring together using a spoon until you have a sticky dough.
  2. Turn the dough out onto an oiled or floured bench to stop it sticking and form it into a log. Then, oil your hands lightly and break the dough into four pieces.
  3. Push these into flattened ovals and fry them in a hot pan, flipping half way to cook both sides.
  4. Serve warm with whatever else you like. Eat them straight away, because they're always best the day they are made.
