A fire which engulfed a bakery in Sydney's southwest last week could result in a significant bread shortage of some brands.

Goodman Fielder has warned that the fire at its factory in Moorebank may impact the supermarket shelf supply of some of Australia's most well-known brands including Helgas, Wonder, Lawson's and Mighty Soft.

"Due to a fire at our Moorebank factory, our customers may notice a shortage of some of our bread brands," Goodman Fielder said in a statement.

"We're doing everything we can to minimise this disruption, including ramping up production at other bakeries as well as support from third party bakeries."

More than 100 staff were evacuated from the factory on Wednesday evening last week after a fire that started in an oven quickly spread through the building.

Fire and Rescue NSW Superintendant Adam Drewberry said the fire was an extremely close call.

"We had live natural gas that had to be switched off, which initially fuelled the fire - making it very hazardous," he said.

More than 70 firefighters battled the blaze for over three hours to bring the inferno under control.

Drewberry said bakery fires are of particular concern with flour and breadcrumbs acting as flammable accelerants.
