Recipe: Colleen's Pumpkin Scones

Vanessa was surprised and excited when Andrew took her out for a special picnic and surprised her with his mum's awards winning pumpkin scones. 

"She passed on the recipe to me and I made them for you today. See if I can impress you," Andrew said as he piled on the jam and whipped cream. 

They definitely looked pretty scrumptious.

If you want to whip them up yourself Andrew's mum, Colleen provided 9Now with the recipe.

Colleen's pumpkin scones 

- Cook one cup of pumpkin and mash

- Add 1/2 cup of sugar

-1 tablespoon of margarine 

-1 teaspoon of salt 

-Leave to cool for a short time

-Beat 1 egg and then add 1/2 cup of milk and then add that to the pumpkin 

-Put 3 cups of self raising flour in a bowl than add above mix

-Don't forget to brush top with milk

-Heat oven to 200c cool for 15-20  minutes
