His deep understanding of Fiji’s history, produce and cooking techniques has evolved into a unique blend of cuisine that includes Polynesian, Melanesian, Indian and Chinese influence.
As an Executive Chef for a number of award winning island resorts, Melbourne-raised Seeto is also the only culinary professional to be awarded Fiji’s top tourism culinary award two years in a row.
Seeto’s menu, which aims to return Fijian cuisine to locally sourced ingredients over international imports, ranges from Spanish Mackerel ‘Kokoda’ bowls, to blackened fish tacos, spiced goat curry pies, and more!
