Every Day Kitchen cook-along: White peach, rose and prosecco granita with clotted rose cream

This is the ultimate in elegant sweet treats. It's also one of the easiest and most impressive treats I know. Whip a refresher like this out over the hot summer months and you'll look like the host with most.

This is a truly sophisticated version of icy fresh granita with the added sparkle of prosecco thrown in. But if you're making it for kids, just drop out the bubbles and add a splash of peach juice instead if needed.

So pretty, fragrant, simple and cooling for a hot day, while peaches are at their best.

White peach, rose and prosecco granita with clotted rose cream recipe

Ingredients:

  • 8 ripe, white peaches
  • 200mL prosecco
  • 2 tablespoons caster sugar
  • 50mL water and 1 tablespoon rosewater, mixed together
  • 300mL clotted or double cream
  • 1 teaspoon rosewater (for the cream)
  • Optional garnish: rose petals, Pashmak Persian fairy floss and Turkish delight + extra peach slices)

Method

  1. Halve and remove the pips from the peaches. Place the peaches, sugar, water and prosecco into a blender and pulse until blended, but not completely smooth — you want the texture of the skin flecked throughout because it looks so beautiful.
  2. Place the mix into a freezer-safe container and freeze for 30 minutes. Then using a fork, break or scrape the ice crystals that are forming around the edges and mix them through. Place the mix back in the freezer for another 30 minutes. Repeat the ice scraping trick every 45 minutes to an hour for around 3 hours, or until you have a glorious crushed ice result.
  3. When ready to serve, mix the rosewater through the clotted cream. Using a fork scrape the granita into glasses and top with a dollop of rose cream and a slice of peach. Garnish with rose petals and serve with Pashmak and Turkish delight on the side.

Note: This granita keeps well in the freezer once you have it at the granita stage, but you will need to scrape it freshly every time you want to serve it.
