Lunch is about to get taken up a notch. 

When The team at The Dolphin Hotel in Sydney's Surry Hills launch a new menu called the 'proper sandwiches' lunch program, you know it's going to be epic. After all it's the same crew who've given us some of the best clifftop dining you can imagine by way of Icebergs Dining Room and Bar at Bondi. Yep, iconic restaurateur Maurice Terzini and executive chef Monty Kulodrovic decided it was time to up the ante when it comes to how we lunch, because honestly, sandwiches can be a thing of great beauty when you get them right, and these guys have nailed it.

1. Think about your bread choices
It needs to be good, freshly baked bread. Certain breads are nice when soft and fresh and others like being toasted.

2. Condiments, condiments, condiments
Grab a new one each time you're at the shops and build up your repertoire, until you have plenty of choice and a good collection to get creative with. Never underestimate the difference a good pickle, chutney, mayonnaise or truffle oil can make. It's the little things that can add punch.

3. Seasoning
It’s important to season the right layers of a sandwich with salt and pepper, so think about where you're adding your seasoning. For example, cucumber softens, it becomes nice and moist with salt added directly onto it.

Explore sandwiches from all parts of the world and tweak them into your own style. Don't be limited by what you think should be in a sandwich, and be brave enough to go out on a limb. You might end up with a combination that you never expected would be such a hit, and then you'll never look back.

Proper sandwiches are available daily from 12noon until sold out with 5 gourmet sandwiches on offer everyday. Flavours and fillings will rotate from a long list of 16 sandwiches with names that include go getta porchetta, trout pout and that forza scamorza.
