Not every dessert-lover is a fan of breakfast, and not every breakfast fan is a fiend for dessert – but this recipe might just see both groups find common ground.

Cereal may be a staple of the breakfast table, but the word 'staple' doesn't automatically mean 'boring', and that's something this recipe will prove in spades.

Here, Jane de Graaff takes Sultana Bran and adds a simple twist that will have all those with a sweet tooth positively sprinting to the kitchen.

Ingredients

  • 2 cups Sultana Bran®
  • ½ cup milk
  • Maple syrup or sweetener of your choice, to taste
  • 1 cup Greek yoghurt
  • 1 teaspoon lemon juice plus zest
  • Dash of vanilla extract

Method

In a small container, crush up your Sultana Bran and pour over ½ cup milk and a dash of maple syrup or sweetener of your choice and give it all a stir. Press it down slightly as this will make your 'cheesecake' base. 

In a small bowl, mix together yoghurt, lemon juice and a little lemon zest and vanilla. Add a dash more maple syrup (if you like) and then spread it evenly over the top of the Sultana Bran. Decorate the top with the rest of the lemon zest and some dots of vanilla essence swirled into the yoghurt topping (optional).

Put the lid on the container (or cover with clingfilm), and leave overnight in the fridge to soak up the milk and set slightly.

Serve chilled in scoops – or make the dish in two small pots so that you have individual serves ready to go.
