Prep your trench coats and plug your slow cookers in, winter is here next week.

And while we say goodbye to some glorious parts of life such as sunshine, the beach and ice cream, we can instead look forward to the fact that we get to enjoy some nice hearty meals.

And if you're stuck on what too cook that isn't your mum's sausage casserole or a potato bake that overwhelms your tastebuds with an absurd amount of cream and cheese, you've come to the right place.

Make a delicious winter warmer to enjoy in this colder weather. Instagram

Everyone's favourite foodie influencer RecipeTin Eats has shared a winter warmer recipe that would knock your mum's sausage casserole out of the park if they were put head to head in a taste test (sorry mum.)

Thai red curry pot roast chicken. It looks as delicious as it sounds. And the best part? It really isn't that difficult to make, according to RecipeTin Eats' Instagram it's just three simple steps.

First off, you're going to get a whole chicken and sprinkle it with a bit of salt while some oil heats in an ovenproof pot - Le Creuset or the Aldi dupe will do .

Cook your curry paste and some spices in your oil, add a bit of stock, coconut and a few more spices and mix it all together.

Now, plonk your chicken into that delicious concoction of flavours, spoon a bit of sauce over the top so it's nice and covered, and surround it with some potatoes.

Cover it up with the lid and bake it in the oven for 40 minutes while you go relax on the couch and read a nice book.

Once those 40 minutes and a few chapters have passed, head back to the kitchen, take the lid off and bake for a further 30 minutes, basting every 10 minutes and adding some beans in at the final 10 minute mark.

Once it's fully cooked, remove your chicken and rest it on a plate for 10 minutes and stir a bit of basil into your sauce.
