Hot on the heels of the coconut water boom came pistachio products, mostly in the form of overpriced chocolates and delicious spreads.

Then Pistachio Papi entered the stage, and the scene was set. Pistachio perfection, in so many forms, including protein bars and a collab with Bakers Delight.

Their next move, however, would prove to be a game changer. Pistachio coconut water, which has taken the country by storm.

Raw C Pure Coconut Water Infused with Pistachio and White Chocolate quickly sold out of Woolworths outlets, where it is sold exclusively. Australians are obsessed.

Even I was desperate to try it, but I couldn't find it at two of my local Woolworths stores. Although a colleague found some left at a store nearby.

"We're excited that our customers really love these latest Raw C coconut water varieties," they add.

The recent warm weather has only increased its popularity, and it only launched two weeks ago.

Raw C Coconut Water also comes in Natural, Chocolate Infused, and Pineapple.

Thankfully the pistachio version is in the distinctive Pistachio Papi green packaging, so it is easy to spot, and this also makes it easy to realise it is sold out.

Other popular coconut water brands include Cocobella which comes in Watermelon & Mint, Chocolate and Coffee.

H2 Coco sells coconut water in Lychee flavour and Chocolate.

Both the coconut water and pistachio trends appear to be here to stay, judging from ongoing customer demand.

Coconut water first launched in Australia in it's current form in 2010 but gained serious traction when new flavours began appearing on supermarket shelves.

The coconut water market in Australia is now worth approximately $362m.

The global pistachio craze kicked off in late 2023 and ramped up in 2024 with the release of Dubai Chocolate products that made use of the unique nut flavour.

And while the vibrant green appearance of pistachio products has helped them to gain popularity, it should be noted that this is likely helped along by green food dye as the natural colour of pistachio is more of a beige/brown/pale green colour.

The pistachio market in Australia alone is worth approximately $100m.
