Dinner can be the most stressful meal of the day; you're tired from work, errands and activities and can barely decide what you want to eat, let alone cook it.

One gadget has transformed that frustration for me, making it easy to whip up something healthy, tasty and affordable.

That appliance is the air fryer and makes quick work of tasks that seem to take forever in the oven and never really taste any good.

I tried Kmart's $39 2L mini air fryer on my go-to cheap and easy dinner and found it worked brilliantly.

The cute lilac appliance barely takes up any space on my small bench, which has one awkwardly placed double power point, and fit neatly in the awkward spot nearest to it.

My standard dinner is chicken with rice and steamed veggies. To make things easier I usually use rice cups and keep a selection of frozen vegetables in the freezer.

That means the only thing I need to cook is the chicken and as I'm cooking for one, I only need to do this once and then can eat the leftovers for the following two nights.

If you aren't cooking for one, this is an quick and easy meal for a few people.

Before cooking the 300g chicken breast in the air fryer, I marinated it in olive oil, salt and paprika for about half an hour, but longer is better if you have the time.

Then I popped it on the centre of the air fryer tray and cooked for 17 minutes at 180 degrees. When the time is up I left it to rest in the air fryer for five minutes.

A small chicken breast fits easily into the mini air fryer but if you want to cook a bigger one try a larger air fryer.

The chicken breast came out of the mini air fryer cooked right through and juicy.

I sliced the chicken breast and added it to rice and veggies. Rachael Gavin

Then all I do is slice some chicken and add it to the microwaved rice and veggies with a little butter and salt.

The rest of the chicken goes into a container and then the fridge so I can use the leftovers for even quicker meals the following two nights.

While I didn't use the mini air fryer's pre-set functions for this meal, there are seven included making it easy to pop in some potatoes, bacon, chops and even muffins.

I can't wait to add in some frozen chips or potato gems to eat with the chicken and veggies tomorrow night.

To clean just soak the tray in soapy water before washing as normal. Rachael Gavin

The air fryer also features an LED touch screen display, 30 minutes timer setting, adjustable temperature up to 200 degrees, overheat protection, cool touch handle and a non-stick coated pan.

It measures 26.5cm high, 20.8cm wide and 23.7cm deep and has capacity for 1.6 litres of food.

If lilac isn't your colour there is also a green mini air fryer for the same price.

Cleaning is easy too, just remove the oil by draining into a jar and wiping the excess with a paper towel. Then add a drop of dishwashing liquid and hot water and leave to soak for a while. Next wash and rinse as normal, then leave to dry.
