Ice-cream ramen confuses, mesmerises the internet

The Franken-foods are coming in thick and fast these days, but not since the HamDog and the mufgel have we encountered a more curious marriage of two popular food items.

New York's ice-cream ramen has been taking Instagram by storm in recent weeks, propelled by online foodies including Insta-users @chloetjohnson and @eatmenyc whose mesmerising ramen dessert footage, featured in the short video above, has racked up thousands of views in just a couple of weeks. The NYC branch of the popular international dessert chain The Dessert Kitchen are the folks behind the alien-looking treat, and for those wondering, why yes we do have a Melbourne branch, and all your wacky favourites are there.

The iconic dessert bar is known for its Asian-leaning sweet takes on savoury dishes, including bao ice-cream sandwiches, dumplings in sweet ginger soup, and more recently bubble tacos (a unique take on the egg waffle craze).

However, the deeper you delve into this enigmatic neon dessert, the more mysterious it becomes. For a start, it is made of neither ramen or ice-cream. And secondly, it contains algae—the luminous blue strands in question are actually jelly noodles coloured with the algae, immersed in a "soup" (not an ice-cream) made from condensed milk and crushed ice, mochi spheres, fresh mango and melon and a white peach sauce.
