Chef shares simple hack to stop your avocado from browning in the fridge
It's no secret that us Aussies love an avocado, but with their price tag these days, we have to be conservative about our consumption.
Often, this means that we'll only eat half an avocado at a time, choosing to store the other half in the fridge to be eaten later.
But along with storing an avocado in the fridge comes the gross, slimy brown layer that forms on the top.

Sometimes you can simply scrape it off, but others times it delves too deep into the flesh where you end up having to waste the other half of your avocado and ultimately throw it in the bin.
Some people swear by those little half-avocado shaped containers you can buy, but honestly, who needs another container to add the the seemingly never ending Tupperware collection?
Not us.
But it appears that there's another, less known, option to save your avocado from the dreaded brown slime, and it will only cost you $1.38.
Speaking with the Express, executive chef and Your Friend in the Kitchen founder Regina Mitchell has shared the simple way she stops avocados from browning.
Basically, the brown slime happens because avocado flesh oxidises when it touches the air, causing the enzymes to spoil.
But Mitchell says the simple way to stop this from happening is with just a hint of lemon juice.

"Lemon or any citrus juice slows oxidation, so putting lemon juice on the avocado can be helpful," she said.
"It just may change the taste a little bit. Storing your halved avocado face down on a plate will also help stop any oxidation."
If you're into the science of it all, citric acid is a natural preservative so when you put lemon juice on the open avocado, it basically lowers the PH levels of the enzymes so that they either react less, or no longer react at all, to oxygen.

Now, if you head to Woolworths you're going to be spending $1.38 on a lemon, and Coles will see you spending $1.60 (these prices are accurate as of the time of publishing).
Mitchell didn't specify whether or not you can use bottled lemon juice, but honestly, we don't see why not? It will definitely save you money in the long run.
Whichever way you choose to source your lemon juice, we're just glad we can finally save the second half of an avocado for a later date without having to scrap out all those yucky bits.
