Nothing is more satisfying than cutting into a stack of light, fluffy pancakes, and now, you can nail them every time at home with the help of one unique ingredient.

Culinary expert Cassie Cooks has revealed the unexpected addition that transforms batter into the perfect fluffy pancake, and home cooks are shocked.

Sharing her tip on the BBC Good Food Everyday Instagram account, the content creator revealed she won't make pancakes without the inclusion of leftover porridge.

Cassie said the breakfast staple helps in enhancing the flavour of the pancake and getting the texture down to a science.

"You'll never guess the secret ingredient in these thick and fluffy American-style pancakes," she began.

"It's something I often have left over from family breakfasts. Yes, it's cold porridge," she said.

The post's caption added, "For a genius sustainable pancake hack, @cassiecooks adds leftover porridge and an overripe banana to the batter – that means added protein, fibre AND plant points!"

Cassie's recipe calls for 150 grams of cold leftover porridge, 150 grams of self-raising flour, 2 teaspoons of baking powder, one ripe and mashed banana, 2 large eggs, 100 millilitres of milk, 2 teaspoons of vegetable oil and whatever toppings you like.

The culinary creator mixes the porridge, flour, baking powder, banana, eggs, and milk in a bowl, then warms some oil in a pan and spoons dollops of the porridge blend into it.
