This simple hack will make cooking for one on a budget easier than ever
Cooking on a budget is hard enough, but cooking on a budget when you're only feeding one person is arguably one of the arduous tasks we face in adult life.
OK, that may have been a bit of an exaggeration, but cooking for one without eating the same meal every night is a tricky task to say the least.
But according to Jasmin Weston, a TikTok creator known for her budget recipes and author of budget cookbook Everyday Eats, there's a simple trick to keep your meals fun and interesting without breaking the bank.

"Making something in bulk doesn't necessarily mean that you have to eat the same thing over and over again," she tells 9honey Kitchen.
"So cooking bulk protein and finding different recipes or different meals that you can curate with low-cost ingredients to switch things up so you don't get bored, I think is best for whoever is just cooking for themselves."
Weston says the easiest way to do that is by cooking a meal base like a Bolognese mince, which can then be repurposed into a different meal each night.
"I love cooking bulk savoury mince and repurposing it for a lot of different dishes," she explains.
"I do savoury mince bowls. Most nights you can turn it into Mexican by reheating it with a bunch of cumin. I even put my leftover mince in rice paper rolls for an easy lunch."

The options are really endless when it comes to a savoury mince base. There's the obvious option of having it over pasta, but Weston throws in a few more creative ideas as well like eating it in a baked potato or turning it into nachos.

Weston originally started creating budget recipes to save for an overseas holiday before realising she had a real knack for it when she began sharing them to TikTok.
Now, she's just realised her first cookbook Everyday Eats, full of delicious recipes that don't break the bank.
And to those who think it all sounds a bit too complicated, Weston, who makes no claim to being a chef, says, "If I can do it, you sure as shit can too!"
