9Honey's Quarantine Kitchen cook-along: easy four-ingredient choc-peanut butter cups for Mum's Day

We're all feeling a little cut off in COVID-19 quarantine right now. Our usual trips to the shops, our work routine and usual schedules are all in turmoil (or dormant), so the places we'd pick up a little perk or treat (like, say, some chocolate) have been seriously limited.

Even more importantly, it's Mother's Day this weekend and there just haven't been as many chances to pick up a box of choccies for Mum. But 9Honey's Quarantine Kitchen has the best DIY answer ever; homemade choc-peanut butter cups.

And I'm here to say they rival the famed Reese's peanut butter cups. Yep, I said that out loud.

Even better, they're just four ingredients, and refined sugar-free (depending on your peanut butter, of course), so that's a quarantine win in my books.

Be warned: once you know how to make them, you might never look back. And then you're only ever five minutes away from the best peanut butter cup of your life. #sorrynotsorry.

Four-ingredient choc-peanut-butter cups of your dreams

Ingredients:

  • ½ cup coconut oil, melted
  • ½ cup cocoa powder (unsweetened, or cacao powder)
  • ⅓-½ cup of maple syrup (see note)
  • peanut butter (I use a 100% peanut version with no added salt or sugar)

Method:

  1. Mix together your melted coconut oil, cocoa powder and maple syrup until well combined and the syrup is all spread through.
  2. Pour the mix into your chocolate moulds of choice, filling to half-way only.
  3. Place little spoonfuls of peanut butter into the centre of each chocolate, and then cover it up with more chocolate mix. Place the moulds in the freezer until they are set. Peel out of the moulds, serve and enjoy.

Note: You can also use honey, date syrup etc in place of the maple syrup - but you may need to warm it slightly so that it mixes through. You can also cut back on the amount of syrup for your sweetness preference.
