These beer-battered onion rings are all about crisp texture and rich flavour, made even better with the subtle malt of XXXX Gold in the batter. They're the ultimate game day snack – easy to grab between cheers and just as good dipped in spicy mayo as they are eaten hot from the tray.

Ingredients (serves ~6)
- 1 extra-large onion or 2 medium onions
- 1 cup (150 g) plain flour
- 1 tsp baking powder
- 1 tsp paprika
- ½ tsp salt (plus flaky sea salt to finish)
- Pepper to season
- 1 cup (240 ml) XXXX Gold beer
- Oil with a high smoke point (e.g. rice bran oil) for shallow frying
Method
- Prep the onion rings. Peel onions and slice into 1.3 cm rings. Discard very small or broken pieces.
- Seasoned flour coating. In a bowl, whisk flour, baking powder, paprika, salt and pepper. Toss onion rings through until lightly coated. Arrange on a wire rack.
- Make the beer batter. Whisk XXXX Gold into the flour mix until smooth but slightly lumpy (like heavy cream).
- Batter and fry. Dip rings in batter and fry in batches of 4–5 at 190 °C for 2–3 minutes each side until golden.
- Drain and season. Rest on a rack over paper towels and sprinkle with flaky salt.
- Serve. Hot and crisp with peri-peri mayo or BBQ sauce.
