Easy ways to turn dinner leftovers into lunch

Dinner leftovers are an easy, economical way to create lunches for the next day or even a couple of days following. In this video, we share one easy recipe to turn last night's chicken curry into a delicious lunchtime pizza – all you'll need is a pizza base and some fresh herbs.

McCormick slow-cooker mild chicken curry

Serves 6

Ingredients

1 tbsp vegetable oil

1 kg skinless chicken thigh fillets, diced

2 onions, sliced

2 potatoes, roughly chopped

1 x 40 g sachet McCormick Slow Cookers Mild Chicken Curry Recipe Base

1 x 400ml can coconut milk

Fresh coriander

Suggested sides: rice or steamed greens

Method

1.      Heat vegetable oil in frying pan over MED-HIGH heat. Brown chicken and onion then add into slow cooker insert pot with potatoes.

2.      Mix McCormick Slow Cookers Mild Chicken Curry Recipe Base with coconut milk and pour over chicken and vegetables, stir through.

3.      Cover and cook for 2 hours on HIGH or 4 hours on LOW (Keep covered during cooking. Cooking times may vary between slow cooker models).

4.      Add fresh coriander and serve with your choice of suggested sides.

Chicken curry pizza

Serves 3-4

Ingredients

1 large pre-bought pizza base

1 cup of leftover McCormick Mild Chicken Curry

1/2-3/4 cup of shredded mozzarella cheese

Handful of fresh coriander, roughly torn (optional)

Fresh chilli, thinly sliced (optional)

Method

1.      Preheat oven to 220°C/200°C (fan-forced). Place pizza base on lightly greased baking tray.

2.      Spread based evenly with leftover chicken curry, then sprinkle over mozzarella cheese.

3.      Bake for 10-15 minutes until the base is golden and crispy, and the cheese has melted and browned slightly.

4.      Scatter over the fresh coriander and sliced chilli if using and serve!

Curried chicken salad wraps

Serves 3-4

4 x wholegrain wraps or tortillas

2 x bunches of cos lettuce

1 x bunch of spring onions

1x 250g punnet of cherry tomatoes

Greek yoghurt to serve

Method

1.      Chop cos lettuce and spring onions, and halve cherry tomatoes.

2.      Fill each wholegrain wrap with chopped cos lettuce and add leftover chicken curry.

3.      Scatter with chopped spring onions and cherry tomatoes.

4.      Add a dollop of Greek yoghurt to serve.

Chicken curry omelette

Serves 2

Ingredients

4 x eggs

1 cup of leftover McCormick Mild Chicken Curry

1 x brown onion

Fresh coriander

Method

1.      Finely chop onion.

2.      In a medium-sized mixing bowl add the leftover curry mix, onion and eggs together and whisk until thoroughly mixed through.

3.      Heat vegetable oil in a frying pan over MED-HIGH heat.

4.      Pour mixture into pan and cook for 2-3 minutes or until lightly golden on one side, then flip and repeat.

5.      Serve with fresh coriander.
