I've said it before and I'll say it again: I like to minimise washing up. The joy of cooking is in the creativity. That inevitably creates a certain mess that will need to be dealt with at some point.

As we cook more (and realise no one will be cleaning up after us), hopefully we get better at tidying as we go – professionals would call this 'keeping their station clean'. I just call it 'I want this to be as easy as possible'.

To that end, I love a good one-pan, one-tray, one-bowl or any kind of one-pot recipe and this honey soy salmon tray bake is the epitome of just that… it's a one-tray dinner that makes the hard work of dinner a little less hard. Perfect for a busy weeknight, no matter what that looks like.

Even better, it's all done in less than 20 minutes and can be scaled up or down to your heart's desire and as fits the number of people you're feeding.

In fact, I'd go so far as to say it's a bit of a magic meal, because it's easy, low fuss and bloody delicious. The kind of dinner you can throw together on a busy night and still look like a kitchen king or queen!

One-tray honey soy salmon tray bake recipe

Ingredients:

  • 2-4 salmon fillets, skin on
  • olive oil
  • baby potatoes, sliced super thin
  • green beans, topped and tailed
  • Brussels sprouts, halved
  • ¼ cup soy sauce
  • 2 tablespoons honey
  • 2 teaspoons sesame oil
  • sesame seeds, toasted

  1. Heat your oven to 200°C. Line baking tray with baking paper. Slice your potatoes very thin and toss with a little olive oil. Top and tail your beans and toss with oil. Halve your Brussels sprouts and toss with oil. In a cup, mix together your honey, soy and sesame oil.
  2. Lay your potatoes on the baking tray in one layer and bake for 10 minutes.
  3. Take the tray out of the oven, slide the potatoes to the bottom and add the beans and Brussels to the tray, along with the fish fillets. Drizzle the fillets with the honey soy sauce. Bake for a further 10 minutes or until the salmon is cooked to your liking and the beans and Brussels are bright green. Serve with a drizzle of oil and topped with sesame seeds.
