Forget complicated meals – cottage cheese on a corn thin (or any base) is the ultimate snack or lunch. It's healthy, tasty, and satisfying.

But good luck finding any in supermarkets.

The cottage cheese shortage continues as Aldi, Coles and Woolworths are struggling to keep up with customer demand for the popular product.

There's no better snack, or lunch even, than cottage cheese on a corn thin. Nine

Not since the eighties has cottage cheese been so popular.

This is partly because food influencers have recently rediscovered this tasty snack and continue to share their favourite ways to enjoy it.

A quick audit of my local Aldi, Coles and Woolies confirmed the major supermarkets are trying and failing to keep up with demand, despite their best efforts.

And Aussies are feeling frustrated.

"Where's all of the cottage cheese?" one Redditor asked on the Aldi Australia Reddit thread.

"I haven't seen the cottage cheese on the shelves in MONTHS, what is going on? National Cottage cheese shortage?" another wrote.

My local Aldi at Baulkham Hills in Sydney did have some in stock this morning, but not a lot. It will sell out fast, especially after I purchased four of them.

Westacre High Protein Cottage Cheese is the product you can grab from Aldi, which is far superior to others according to fans.

It manages to be creamy as well as tarte, and costs just $5.49 for a 550g container. It's also 97 per cent fat free.

Coles was faring a little worse. They sell several different brands of cottage cheese, but all but one were out of stock at the same location today.

Woolies isn't doing much better, with only one container of Brancourts Classic Cottage Cheese left and a small number of their home brand version.

So what are health conscious Aussies to do if they can't find any?

It's spring, so many of us are thinking of ways to improve our diets as the weather warms up and cottage cheese is one of the easiest ways to do this.

"The resurgence of cottage cheese is only a good thing when it comes to nutrition adding calcium, high amounts of well absorbed protein and low in calories," dietician Susie Burrell tells nine.com.au.

"If you like it, there are only benefits that come from including it in your diet."

For those who can't find any in stock at their local supermarkets, Burrell suggest high protein feta or ricotta, although they don't contain as much protein as cottage cheese.

Aldi tells nine.com.au they are working closely with supply partners to increase stock levels to meet demand.

They pointed to their Westacre Diary Smooth Ricotta or Westacre Dairy Cream Cheese Spreadable as two possible alternatives.

A Coles Spokesperson added: "We know that cottage cheese has had a major resurgence in popularity over the past year thanks to social media showcasing creative recipes and nutritious snack ideas.

"Our suppliers have increased their capacity and are working around the clock to meet this demand. We're continuing to support them to ensure this trending and versatile product remains available on our shelves".
