Well, if this isn't an epic centrepiece, I don't know what is. It's also a great way to spice up your tortilla game.

Today for Every Day Kitchen we are turning tortillas and chilli con carne into an epic cake stack. Don't worry, it's not a sweet cake, it's just a fun way to serve your chilli con carne.
Make sure you read the recipe tip — it really helps if your cake tin is slightly smaller than your tortillas for this one to create the final effect of the cake stack.

Tortilla and chilli con carne cake stack recipe

Ingredients

  • 500g beef mince
  • 1 tablespoon olive oil
  • 1 x pack Continental chilli con carne seasoning
  • 1 tin black beans, drained
  • 1 cup sweet potato, grated
  • 1 tin crushed tomatoes + ¼ cup water to rinse
  • tortillas (about 6) that are slightly bigger than your cake tin, see tip in method
  • grated cheese of choice
  • olive oil spray

Salsa ingredients:

  • 1 tin corn, drained
  • 2 tomatoes, diced
  • 1 avocados, diced
  • 1/2 red onion, diced
  • fresh coriander
  • 2 limes
  • spices of choice (cumin, smoked paprika, salt)

TIP: This trick works best if your cake tin is slightly smaller than your tortillas, as it will help the sides curl up and hold all the sauce in.

Method

  1. Heat a dash of oil in your frypan to medium-high heat and brown down the mince until crisping. Add the Continental chilli con carne seasoning and stir through.
  2. Add black beans and sweet potato and stir through, then tip in the tomatoes and rinse the tin with ¼ cup water. Stir and simmer down for 10 minutes to infuse flavour and reduce.
  3. Pre-heat your oven to 180°C and grease a small springform cake tin. Place a tortilla in the bottom, pressing it in to curl the edges up a little. Sprinkle with a layer of cheese, then spread some of the chilli con carne mince over the tortilla. Place another tortilla on top and nestle and press it in until it is snug.
  4. Repeat the layers until you run out of mince mix, making sure the top layer is mince and lots of cheese. Bake for 25-30 minutes, or until the top cheese is molten and browning. Remove from the oven and rest for 10 minutes to help it to set.
  5. Meanwhile, mix all your salsa ingredients together. Release the cake from the tin, slice into wedges and serve with salsa.
