On the outside it looks like a regular meat pie, but you'll realise it's extraordinary when you open it

When you think about true Australiana, there's no doubt a meat pie is one of the first things that comes to mind.

Either that, or a pub classic... the humble chicken parmigiana (and the debate as to how you should abbreviate it – parmy? Parmi? Parma?).

Well, if you find yourself at the right place and the right time over the next few days, there's a way you can have both at once.

It's the brainchild of pie enthusiast Michael Di Salvatore, who opened Micks Bakery in 1990.

For almost 25 years, Di Salvatore – who started helping out at the bakery in his parents' Leeton, New South Wales supermarket at 14 – has been fine-tuning his skills.

And it all came down to this moment of truth... the debut of his new variation of his Mickparmy Pie recipe at the 2024 Sydney Royal Easter Show, which closes on April 2.

It is, essentially, exactly as it sounds – when you buy the $12 pie, you're going to get a rich, filling chicken parmigiana in a pastry sac.

"Marinated chicken infused with tomato, layed with smoked ham, chicken parmie sauce, then smashed with cheese inside," Di Salvatore told 9News before the show opened last week.

Punters can find them at Micks Bakery's store at the show, which is located just outside the Woodchop Stadium.

Also on the menu is the Mick Giovanni, which is a meat pie filled with spaghetti and meatballs, and the Mick Bacon Me Crazy, which is essentially a Big Mac in a pie.

You can also get a whole lamb roast dinner in a pie.

And for pie lovers who are gluten intolerant, Micks Bakery also offers gluten free options.
