A truck carrying 3000 eggs overturned on the Hume Highway in New South Wales this morning, scattering its cargo across the road.

The truck was travelling north before it crossed into the southbound lanes and hit another truck carrying 40,000 litres of milk, NSW Fire and Rescue told 9news.com.au.

The first truck overturned onto its side, leaking shattered eggs and diesel onto the road.

The driver had to be rescued from the cab and was taken to hospital in a stable condition.

Footage from the site showed rivers and pools of yolk oozing across the road.

Traffic was slowed for several hours before the site was cleared and reopened at about 2.45pm.
