Maple honey mustard glazed ham

INGREDIENTS:

  • 1 (about 8 -10kg) whole leg ham, on the bone

• Whole cloves, to stud

• 1/2 cup brown sugar

• 1/3 cup maple syrup

• 1/3 cup honey

• 1 tablespoon Dijon mustard

METHOD

Step 1

Stir the sugar, maple syrup, honey and mustard in a bowl until the sugar dissolves.

Step 2

Preheat oven to 180C.

Line a large baking dish with 2 layers of non-stick baking paper.

Use a sharp knife to cut around the shank of the ham, about 10 – 15cm from the end.

Run a knife under the rind around edge of ham.

Gently lift the rind off in 1 piece by running your fingers between the rind and the fat.

Score the fat in a diamond pattern, about 3mm deep. Stud the centres of the diamonds with cloves. Wrap the shank with foil. Transfer to prepared dish.

Step 3

Brush one-third of the glaze over the ham.

Bake, brushing with glaze every 20-25 minutes, for 1 hour 30 minutes.

Allow to rest 40 minutes before carving

TIP

Place an oven shelf in the lowest position.

Remove all other shelves in the oven.

Mango Salsa

INGREDIENTS:

• 2 mangoes, diced

 • 1/2 small red onion, finely diced

• 1 teaspoon red chilli, chopped

• 2 tablespoons parsley (or coriander) chopped

 • 1-2 tablespoons lime juice, to taste

METHOD

Place mango, onion, chilli and parsley into a bowl. Drizzle lime juice and stir.

Cherry glazed ham

INGREDIENTS

• 1 (about 8 -10kg) whole leg ham, on the bone

• Whole cloves, to stud

• 1/2 cup brown sugar

• 1/2 cup maple syrup

• 1/3 teaspoon 5-spice

• 1 cinnamon stick

• 60ml Nardini Tagliatella

• 370gr jar of cherry jam

METHOD

Step 1

 Preheat oven to 180C. Place jam, syrup, sugar, 1/3 cup water, allspice, cinnamon, Nardini Tagliatella and ground cloves in a saucepan over medium-high heat. Simmer for 10 minutes or until the glaze thickens. Strain the mixture, discarding solids.

Place the ham on a wire rack in a roasting pan. Add boiling water to the pan until it reaches 2cm up the sides of the pan. Brush the ham with a quarter of the cherry mixture. Wrap shank in foil to stop it over-browning. Bake, basting with the cherry mixture every 20-25 minutes, for 1 hour 30 minutes or until the ham is golden. Let it rest for at least 40min, remove the foil from the shank and serve.
