Sticky Chicken Bites With Rice Balls - Serves Four

Ingredients

Chicken

2 large chicken breasts, cubed

2 tbsp cornflour

2 eggs, beaten

75g plain flour

1 tsp paprika

Sunflower oil

Sauce

2 tbsp soy

2 tbsp ketchup

1 clove garlic, crushed

2 tbsp honey

2 tsp apple cider vinegar

1 tbsp sweet chilli sauce

2 tbsp toasted sesame seeds

3 spring onions, sliced

Rice balls

200g pre cooked sticky rice, warm

3 tbsp toasted sesame seeds

To serve

Edamame, baby sweetcorn and strips of carrot for colour

Equipment

2 glass bowls for the chicken and the egg

Plate for the flour and paprika mix

Non-stick pan to fry the chicken

Small tongs to turn the chicken

Kitchen roll and plate for the cooked chicken

Wooden spoon

Bowl for mixing rice

Small pan for cooking the serving of veg

Method

  1. Put the cubed chicken into a bowl, add the cornflour and season lightly with salt and pepper. Mix the flour and paprika together in a separate bowl. Dip the chicken into the beaten egg, then coat in the paprika and flour mix.

  2. Heat the oil in a frying pan and fry the chicken for 4-5 minutes until golden and cooked through. Place the cooked chicken on kitchen towel on a plate and set aside.

  3. Wipe the pan clean with kitchen roll. Add the soy sauce, ketchup, garlic, honey, apple cider vinegar and sweet chilli sauce. Bring up to the boil and reduce until sticky. Return the cooked chicken and turn to coat. Sprinkle it with sesame seeds and spring onions.

  4. Mix the sticky rice with the sesame seeds and shape using the rice ball mould to form 3 balls.
