Zoe Bingley-Pullin's mini apple and coconut crumble

"It makes my so happy when I see [my 14-month-old daughter], Emily, eating my mini apple and coconut crumble as I know it's a healthy source of good fats from coconut, slow-releasing fibre and the right kinds of sugar from apple," says Zoe Bingley-Pullin, accredited nutritionist and nutrition ambassador Only About Children.

"I also love to eat it with a little yoghurt and cinnamon."

Serves 10

Ingredients

5 apples, cored and cut in half
1-2 tbsp butter or coconut oil, melted
2 tsp cinnamon, ground
1 cup of oats
1/4 cup shredded coconut
1 tsp vanilla extract
1/4 cup sultanas

Optional: yoghurt and honey topping 

Method

1 Preheat oven to between 180 and 200 degrees 

2 Mix oats, coconut, cinnamon, sultanas, vanilla extract, butter or coconut oil in a bowl

3 Rub each apple half with 1 tsp butter and top with 1 to 2 tbsp topping, press down to secure the topping

4 Place apple halves in a baking dish filled with enough water to touch the sides of each apple half

5 Bake for 30-40 minutes, until the top is golden

6 Serve with an optional dollop of yoghurt and drizzle of honey
