9Honey Kitchen Hacks: Aussie egg burger trick

Jane de Graaff

It's time for another 9Honey Kitchen Hack and today we're talking burgers. Specifically the best burger hack of your life.

You can argue all you like about what goes in it, but there's nothing quite like a burger with 'the lot'. What the lot actually means to you could be anything from beetroot and pineapple (don't freak out just yet) to tomato, secret burger sauce and pickles. But whatever it looks like, I challenge you to get an egg into your patty for the good-old Aussie egg burger hack.

There's a couple of reasons for this; first up it's flat-out flavour, because ain't nothing quite so much of a flavour bomb as a still-gooey fried egg right there on your burger.

But second of all, it helps to keep a burger moist. The egg cooked in the centre just adds extra texture to the meat patty and it will change your life.

Thirdly, it just looks so damn cool and it is straight up an awesome trick.

It's a bit like toad in the hole (egg cooked in the middle of some toast), but better because it's egg cooked in the middle of meat patty... and oh yes, it will also end up on a burger. Winning.

You'll need mince for this trick, or at least some premade burger patties that are a decent size, because you'll need room for the egg in the middle.

For my patties I never add anything. I just use beef mince that still has some fat in it. The fat is the flavour and it also holds the patties together — so lean mince is never a good idea because you'll end up with dry burgers.

Really work the mince with your hands until it is nice and sticky. Roll it into balls and then flatten each into a patty that is nice and big.

Use a cookie cutter or something small and round to cut the centre out of the patty, because that's where your egg will go.

Heat a fry-pan or the barbecue grill and then drop your patty onto the grill to get it sizzling. Cook it a little (as it will take longer than the egg).

Once you're happy with where the patty is at, crack an egg right into the centre and let it cook just enough to hold onto the patty, then flip the burger patty and cook the other side.

Then simply plate up on a bun of your choice with extra toppings, fillings... the lot.
I always add cheese to mine. But you do you and we can argue about the pineapple and beetroot later.
