According to science, when an onion is cut or damaged, it naturally releases a combination of natural chemicals and enzymes (or 'volatile compounds') as a self-defense mechanism.

These compounds are what cause irritation to the eyes, or trigger a stream of tears.

The Tearless Onions contain fewer of these compounds, and after harvest they continue to reduce, as opposed to regular onions, in which these compounds increase over time.

This means the varietal become more tearless over time.

The Tearless Onions comes after decades of development using natural methods, including cross-breeding existing onion varieties.
