Park Hyatt Sydney Executive Chef, Eitenne Karner, and Pastry Chef, Shlomi Palensya have partnered up to serve an immersive food experience that is changing the way we think about food.
At the Park Hyatt restaurant in Sydney, diners are witnessing a fusion of food and art that feels like a welcome throwback to childhood.
Against the backdrop of the Sydney Opera House through floor-to ceiling glass windows, this might appear to be your regular three course meal.
Entrée and main courses are laid on the table, but it’s clear that something extraordinary is in the works.

Then Palensya gets to work. Using the best seasonal produce on offer, he seamlessly creates an edible art piece that truly takes your breath away.
Like a kid in a candy store, something delicious materialises in front of you and it’s a joy to bare witness to its unfolding.
Opera house cheesecakes take shape, sorbets are splashed everywhere, chocolate truffle balls and juicy macarons sprinkled in between.
Then the real fun begins. You’re passed a spoon and playfully tucking into a flurry of colours and patterns.

“It’s like painting a new portrait on a blank canvas each night.” Palensya told 9Honey Kitchen.
“The finished outcome will never be the same” Palensya says.
But that’s the excitement of Table 100. There’s no telling what might show up on the canvas.

Despite being an Instagram worthy event, Palensya uses flavour combinations and textures that are a testament to his abilities as a first-class pastry chef.
Table 100 is available for one seating per night every Tuesday to Sunday, for groups of 6-8 diners, at $195 per person.
