Spanish pastry chef's unique tool for perfect crème brûlée finish

Crème brûlée lovers everywhere, get ready for some serious bake equipment envy, as a Spanish pastry genius demonstrates the gadget you'll wish you owned.

If you've ever tried to caramelise a crème brûlée at home, you'll know how quickly things can go south. One minute you have a perfectly bubbling top, the next you might have burnt black holes and acrid sugar.

At 9Kitchen we love nothing more than a perfect toffee-topped dessert, so when we stumbled across a pastry genius in Spain who bypasses the burnt sugar problem, we couldn’t keep it to ourselves.

Jacob Torreblanca is a highly-awarded Spanish pastry chef in his own right, but he's also sweet-making royalty as the son of pastry master Paco Torreblanca. Given the family's name in pastry, it's no wonder that the perfect crème brûlée finish is important.

Watch the transformation in the video above as the chef demonstrates the even, controlled and mouth-watering crisping of a large-scale Torreblanca crème brûlée tart—achieved by the use of a large, slightly curved, super-heated "wand". By running the wand over the top of the slabs of crème brûlée dessert at a steady and measured pace, Torreblanca creates a perfect finish to his dessert.

The video above gives a good indication of how hot that wand is (just check out those fiery flares, yikes!). Torreblanca posted the video to his 13,000 followers on Instagram (Torreblanca posted the video), and in just a one week it has been viewed over 56,000 times, mesmerising crème brûlée lovers everywhere.

So far we can't tell if Torres is repurposing a piece of equipment, or if the awesome piece of machinery is specifically designed for the task, but we do know that if it becomes commercially available it'll mean a whole lot more crème brûlée perfection everywhere.

Previously brûlée lovers and chefs had to make do with a blowtorch, a grill, or a fire heated branding iron for the perfect crunchy toffee top, but with a gadget like the one Torreblanca is brandishing, we can imagine that crème brûlée lovers are about to step up their game.
