As temperatures continue to soar, finding a meal that is refreshing against the scorching heat can be a challenge.

Nothing epitomises the taste of summer quite like a juicy mango it's sweet, cooling and delicious, making for a versatile ingredient that cuts through the heat.

9honey Kitchen's resident chef Minoli De Silva has shared the recipe for her simple yet mouth-watering mango salad.

This is De Silva's go-to dish when she's asked to bring something with her to a party, as it requires "zero cooking and it works with absolutely everything."

Her summer salad starts by cutting up a mango and removing its skin – "kind of like filleting a mango."

You want to dice the fruit so it's easy to eat, so she recommends bite-sized pieces and placing them into a large bowl.

De Silva then cuts and dices up a kiwi fruit, and though you can eat its skin, she removes it.

She suggests having this mango salad with fish, by itself or you can use your imagination, Silva thought it could also work with ice cream.

Slicing and dicing a cucumber, she says it's entirely optional to keep or remove the cucumber seeds, though she sometimes likes to keep them in, demonstrating the technique she used.

As mangoes can sometimes be tart, to bring out their sweetness, De Silva shared her hot tip of adding a tiny bit of salt – explaining it is a flavour enhancer that makes "everything taste good."

To add a bite to the salad, she adds some diced shallot, taking the meal into more savoury territory.

Adding a pinch of salt, a crack of pepper and a drizzle of olive oil, she then zests a lime, squeezing the juice from the cheek of it.

This adds depth in flavour and freshness to the salad that once tossed through and combined with the other ingredients, finishes off the salad.

Now almost ready to go, De Silva serves the mango salad, ready to be garnished with some fresh coriander and some toasted coconut flakes for added crunch.

Ingredients:

1 ripe mango

1 Lebanese cucumber

1 shallot

1 kiwi fruit

1 tbsp olive oil

1 lime, juice and zest

Salt to taste

Fresh cracked pepper

Coriander leaves, to garnish

Toasted coconut flakes

Method

Dice mango, cucumber, shallot and kiwi fruit and add them to a large bowl.

Drizzle in the olive oil, squeeze in the lime juice and add the lime zest. Add the pepper, and salt, to taste.

Serve in a flat dish and garnish with coriander and toasted coconut flakes.
