Celebrity chef Iain 'Huey' Hewitson shares two meals you can make for under $7 using two-minute noodles

With the cost of living constantly rising and grocery prices going up, everyone is looking for ways to make ends meet.

Celebrity chef Iain 'Huey' Hewitson is winning a new generation of fans thanks to his TikTok account and recently became an ambassador for Maggi's new two-minute Vegemite-flavoured noodles range.

He said he welcomed the chance to come on board this iconic Aussie creation and celebrated the launch by creating two recipes you can make at home for under $7, which he shared with 9honey.

Hewitson said he and his family, which includes daughter Charlotte, 22, have always loved two-minute noodles and Vegemite individually.

"Charlotte, I think, lived on two-minute noodles for the first five years of her life and Vegemite is something we have always had in the home," he said.

As well as being versatile, two-minute noodles are economical. A five-pack costs $5, or even less on sale.

Below are two recipes supplied to 9honey that you can make at home for less than $7 a serve.

Lettuce cups

Ingredients

Maggi two-minute noodles Vegemite-flavoured noodles (1 packet)

Chinese sausage

1⁄8 red capsicum

1⁄8 yellow capsicum

1⁄8 small red onion

1 baby carrot

2 green beans

1 corn cob

3 snow peas

Inner leaves of one baby bok choy

2-3 iceberg lettuce cups

3 coriander sprigs

½ fresh lime

Olive oil

Directions

Start by cooking the noodles as per instructions, using either a stove top or microwave.

Break the noodles into four before putting them in a bowl or saucepan and covering them with boiling water, then cook for two minutes.

Next, slice the Chinese sausage into slivers and place into a hot wok with some oil.

Add the vegetables, including strips of red and yellow capsicum, red onion, corn that has been stripped from the cob, finely sliced baby carrot and beans, and sliced baby bok choy and snow peas, added near the end.

Drain the noodles and add the flavour pouch and a tiny bit of butter before tossing and placing in a bowl. Next add the stir-fried ingredients and give it a quick mix.

Then halve an iceberg lettuce, remove a few of the outer leaves, which can be used another time, then take some of the crunchy leaves and arrange on the platter beside a wedge of lime, fresh coriander and a mound of noodle mix.

"To serve, we put some of that lovely noodle mix into our lettuce cup, we put a sprig of coriander and a squeeze of lime," Hewitson said.

2-3 slices of fresh or tinned pineapple

2-3 baby carrots

2-3 radishes

2-3 spring onions

1 chicken breast

¼ lime

Directions

Start by cooking the noodles as per instructions, using either a stove top or microwave.

Once cooked, drain the noodles and add the flavour pouch and a tiny bit of butter before tossing.

Poach a small chicken breast and once cooked, slice thinly.

Neatly arrange the noodles, chicken, vegetables, pineapple and herbs in the bowl before adding a squeeze of lime and orange juice over the top and serving.
