Ingredients:
- 125g butter
- 1 egg
- ½tsp vanilla
- 1 ½ cups plain flour
- ¼ cup brown sugar
- ¼ cup caster sugar
- ¼ tsp bicarb soda
- pinch of salt
- ½ cup chocolate bits (mix of types), broken or chopped into small pieces
Method:
- Melt butter and set aside to cool a little. Meanwhile, combine all dry ingredients including chocolate chips.
- Mix whisked egg and vanilla into the cooled butter and then work the wet ingredients into the dry to make a firm cookie dough.
- Roll the dough into small balls - about a tablespoon amount works well.
- Place four balls on a microwave safe tray or plate lined with baking paper - allowing plenty of room between them - and then flatten them slightly.
- Microwave on high for 2 minutes and then check to make sure the cookies are not burning. Microwave for another 30seconds to finish off. Allow cookies to cool on a wire rack until cool enough to pick up and eat. Serve warm for gooey chocolate pieces.
