9Honey's Every Day Kitchen cook-along: Dorito crumbed chicken schnitzel with cheat's Caesar salad

This recipe is a perfect one to play around and have some fun with.

It's a basic chicken nugget/schnitzel recipe with the requisite crunchy coating, but instead of the panko crumbs I usually opt for, I like to shake it up with some crushed-up chips of your choice.

And so, I present to you: Dorito crumbed chicken schnitzel!

Doritos work particularly well, but you can use any chips you love — think salt and vinegar, BBQ, you name it.

It's a fun novelty trick and because the chips are so crispy already, they get excellent crunch onto that chicken with a huge bang of flavour.

Crisp chip crumbed chicken schnitzel recipe

  • 2 x chicken breasts, halved horizontally and beaten flat (or chicken tenders)
  • 1 cup buttermilk
  • 1 x large bag Doritos, any flavour you like, coarsely crushed
  • 50g Parmesan cheese, shredded
  • 2 eggs, lightly whisked
  • ½ cup plain flour

Cheat's Caesar salad to serve:

  • oven chips, to serve
  • 2 x baby cos, gem lettuce
  • parmesan flakes

Cheat's Caesar(ish) salad Ddressing:

  • ½ cup whole egg mayonnaise
  • olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon crushed garlic
  • squeeze of fresh lemon juice
  • salt and pepper

Method:

  1. Brine your chicken: Make sure your chicken breasts have been halved horizontally and beaten flat. Place the chicken in a ceramic bowl and cover with the buttermilk. Cover and place in the fridge for 4 hours or overnight. Note: you can skip this step, but I do recommend it.
  2. Cook your oven chips as per the packet instructions.
  3. Make your schnitzel: Line a baking tray with baking paper. If you have a rack that fits the tray, put it in the tray (allowing air to circulate will help crisping). Open the packet of crisps and let the air out, then crush the chips in the bag until you have small pieces good for a crumb coat. Tip into a bowl or plate and mix with the shredded Parmesan. Place the flour on a wide plate and season with salt and pepper.
  4. Line up your chicken, plate of seasoned flour, whisked egg in a flat shallow dish, and the dish of crushed chips and Parmesan. Drain the chicken from the buttermilk. Dip the chicken into the flour to get a good coating. Dip the floured chicken into the egg wash and then press it into the dish of crisp crumbs, pressing down to get a good coat all over. Lay the coated chicken onto the prepared rack in the baking tray. Spray with a little oil and then bake at 180°C for 15-20 minutes, or until cooked through.
  5. Meanwhile, make your cheat's Caesar(ish) salad: halve the lettuce heart lengthways and lay one on each plate. Whisk together your dressing ingredients in a jar and season with salt and pepper. Drizzle a little dressing over each lettuce heart and finish with Parmesan crumbs. Serve the crisp crumbed chicken schnitzel with the chips and halved lettuces. Top the lettuce with any leftover crumbs from the baking pan.
