Chef's 'controversial' bruschetta using Birds Eye potato waffles has people divided

Bruschetta is a staple antipasto dish that is a must-have at any Italian dinner, and there is a very specific way to make it.

But one chef's take on the popular entree has got people divided, with some loving the idea of replacing one of the key ingredients.

Instead of using the customary piece of grilled bread, chef Ollie used Birds Eye potato waffles, posting his recipe on his TikTok account @ollie_eats.

Ollie explained he took actually took inspiration from Birds Eye UK's TikTok account, which recommended enjoying the waffles served with cheese slices, tomatoes, and seasoning.

"Birds Eye, we love you, but let me have a go. I saw this video on their account the other day and it is a great idea," he said.

The he embarks on adding "more love".

"I got my cherry tomatoes. I seasoned them up with salt, pepper and garlic. I've given them a little bit of a roasting, then got some pizza mozzarella and melted them over some waffles."

He then seasoned it with some basil and a little bit of balsamic vinegar, before plating it up like a bruschetta and adding a balsamic glaze.

"Let me know what you think," he asked.

The clip has been viewed over 300,000 times with plenty of people sharing their thoughts in the comments.

One person said it looked "unreal", while another person agreed this recipe was "so much better".

However the controversial twist didn't have everyone convinced, with one person commenting: "I can literally hear Italians crying."

"Should have toasted the waffles before adding the cheese so they had a crunch," another person said, with another person agreeing they worried "how soggy that made the waffle".

"Too much messing around sorry," was another response.
