9Honey Kitchen Hacks: Cheesy mashed potato muffins
It's time for another 9Honey Kitchen Hack, and this one will make feeding the kids a breeze, because we're going to take mashed potato and turn it into cheesy veggie-filled muffins.
They're so easy the kids can get involved, so tasty everyone will want them, and so simple you'll never look back.

We're using Continental's creamy cheesy mash because it's the perfect consistency for this trick and it makes everything that much faster. Same goes for the pie maker, it's another easy way to shave some time off in the kitchen without sacrificing flavour. But don't worry if you don't have a pie maker — you can still make these delicious bites in the oven.
They make great snacks, lunch box fillers and finger food, for everyone.
Cheesy mashed potato muffins recipe:
Ingredients
- 1 family pack Continental creamy cheesy mash (2 cups)
- 2 eggs, whisked
- ¾ cup bacon pieces, fried off
- 1 cup self raising flour
- ½ cup grated cheese
- ½ cup mixed peas and corn (frozen is fine)

Method
- Preheat your pie maker (see notes if you are using the oven), make mash as per packet instructions and allow to cool slightly.
- Meanwhile, if you haven't already, fry off your bacon pieces until browned.
- Mix whisked eggs, bacon pieces and flour into the mash to combine and then add cheese and peas and corn and mix.
- Scoop your batter into the heated pie maker and cook for 6-8 minutes or until browned on top and cooked through.
Note: You can make these in a muffin tin in the oven, but they will need to bake for about 20 minutes. Just pre-heat your oven to 180°C and grease and line a muffin tin. Put your batter into the tin and bake for 20 minutes or until golden.
