Currently working on Getting Grilled With Curtis Stone, the chef told People that the ticket to nailing it is in the seasoning.

"Since you can't add flavour to the centre of the meat, the outside of the steak has to do all the work. Sprinkle salt and pepper from high up over the meat – it'll fall in an even layer – and use more than you think you should. Then add a pinch more."

Seasoning a steak well is crucial for both flavour and texture, as salt plays a significant role in the moisture level of the meat.

Woodham told the publication that the searing process is critical to cooking steak well, and it begins days before it's eaten.

"Let steaks air-dry in the fridge, uncovered, for a day or two before cooking. This draws out the moisture, which tenderises the meat and will give it a nice brown crust when cooked. Remember to bring steaks up to room temperature before cooking."

The searing process is a critical step in cooking a steak. It allows the outsides to cook and crisp up, while maintaining a soft and juicy inside.

When searing on high heat, the meat remains tender and caramelised on the outside, creating a balance of flavours and textures.
