Ingredient Jamie Oliver swears by for 'crisp and colour' on your roast potatoes
The humble roast potato is a staple when it comes to every roast dinner, especially on Christmas Day.
There's nothing better than biting into one of those perfectly crispy delights only to find a soft and fluffy centre.
But then again, when it comes to Christmas nothing can ruin the day quite as quickly as a soggy, flavourless roast potato – something that is far too easy to come by.

So, how do we avoid such a catastrophe? Is there a foolproof way to ensure that your roast potatoes are golden and crisp rather than flat and lifeless? How do we keep this delightful carb-loaded veggie atop the Christmas day food chain?
Well, as he does every year, Jamie Oliver is here to save Christmas.
Oliver has shared his foolproof method to get crispy, crunchy (but still fluffy) roast potatoes every time, and thankfully for those who don't love to spend their entire Christmas day slaving away over a hot oven – the recipe is pretty easy.
The best part of all? You can start prepping before Christmas Day.
The secret to the delightful starchy side dish is three different fats, which Oliver says gives the potatoes the crunch and flavour that we're all hoping for.
"Butter gives an amazing sweetness and richness, turkey fat gives a stocky, depth of flavour and olive oil is just fantastic – you get that peppery grassiness," he said.

While roast potato is the star of the dish, a star always needs a supporting act, and in this case – it's gravy.
A roast dinner is simply incomplete without the gravy, it goes with everyone, adds the perfect amount of flavour, and is potentially the only way to save a lifeless roast potato.
Of course, no one knows this better than the king of Christmas lunch himself.
Oliver not only has a foolproof roast potato recipe, but he's also got a secret step to help you up your gravy game.

The celebrity chef shared that the ideal ingredient for the perfect gravy is actually to spoon in a scoop of strawberry jam.
"The little secret ingredient that I love is just some beautiful jam. That little sweetness really helps the gravy sing," he said.
So, this Christmas there's no excuses, all you have to do is follow the recipe and add some jam into your gravy to make the perfect meal.
