Bachelorette host Osher Gunsberg introduced Sophie – and her eight remaining suitors – to the new boys on the block.

Intruders Guy, 37, AJ, 37, Paul, 39, all received a warm welcome from the television star, but it was Stu, 44, who made the biggest impression.

"I've bumped into you before," a shocked Sophie told Stu, as he walked towards her with a bottle of champagne in his hand.

"I can't believe you remember!" the third-generation publican, who has been dubbed one of Australia's most eligible bachelors, replied. "I was wondering whether you'd remember."

Last year, Sophie and Stu met briefly and instantly connected. But when Stu organised a date for her on his yacht, Sophie cancelled the morning of because she was hungover.

"The fact that Stu's gone to all that effort to make his way on The Bachelorette when I've already stood him up, he really wants me,' Sophie said.

And he really does.

On Thursday morning, Stu told Daily Telegraph that he just had to meet her again.

"It’s a risk for someone like me to go on the show,” he told the outlet. “I ummed and aahed a lot but what got me over the line was that I just thought I saw something in Soph.

"When I first met her it was excellent and I really wanted to meet her again, and I had to go through the rigmarole to do it."

But it wasn't an easy decision. Stu has four young daughters and an ex-wife to consider.

"I’ve been pretty clear that I enjoyed married life with my ex-wife," he said. "I enjoyed my children and it wasn’t my decision [to end the relationship]. I was heartbroken. But you don’t want to be lonely so I’ve been trying to meet someone."

Well, it looks like he's finally met someone -- but whether she's The One -- we'll have to wait and see!
