A man who allegedly murdered his mother in a Sydney home will remain behind bars for the next week after refusing to allow police to collect a forensic sample.

Joel Woszatka, 25, was arrested on Monday after his mother Lanell Latta's body was found with stab wounds in their clifftop Avalon Beach home.

He refused to come up from the cells when his matter was mentioned in Manly Local Court on Tuesday and his lawyer also indicated he would not consent to a forensic collection procedure.

Woszatka is charged with his mother's murder and assaulting her partner, Geoff Robson-Scott.

Mr Robson-Scott was among friends and family members to pay tribute to the 50-year-old hairdresser, describing her as "beautiful in spirit".

The matter will return to court on September 26.
