Mark Watkins first started experimenting with flavour as a 16 year old, attempting to make ginger beer in his back yard. Mt. Uncle Distillery began its life in 2001, and began with a multitude of liqueurs sourcing ingredients and fruits from Mt Uncle farm itself and other local farm lands.
