Olympian Morgan Mitchell shares how she fuels her training with a vegan diet

Morgan Mitchell is a legendary Australian athlete, who's represented us in athletics at the Olympics twice. She's also an F45 athlete, with a passion for getting everyone excited to move their bodies.

She's been vegan since 2014, and says she hasn't looked back since.

To give us an insight into how she fuels her body, Mitchell shared her typical day on a plate with 9Honey Coach.

Breakfast

I start my day with a smoothie with banana, berries, spinach, chia seeds and vegan collagen powder.

I'll drink that with a green tea and a hot cross bun (obsessed!!)

Lunch

Right now I'm loving a tofu salad while the weather is warm.

I grill tofu, coated in spices and nutritional yeast. The salad is made up of spinach with walnuts, pomegranate seeds, mango, red onion and cucumber.

It's honestly the most refreshing salad ever!

For drinks, I like to stick to water or orange juice for a vitamin C hit.

Dinner

I'll switch up my dinner routine to keep it interesting – lately I've been having vegan sushi or vegan spaghetti with Beyond Meat meatballs and a fresh salad.

I also love Asian fusion and will make my own rice noodle bowls with tofu, bok choy, mushroom mix and chilli.

Specific before and after training meals

Before doing an F45 class I will usually have one to two pieces of toast with peanut butter, banana, maple syrup and blueberries for the energy hit.

Post training I like to have a protein smoothie similar to my breakfast smoothie. Recovery is key.

Special treats

My number one special treat food is French fries and hash browns. My friends know how obsessed I am, I can't get enough!
