Michelle Bridges shares her day on a plate and tips for the Easter long weekend

Michelle Bridges is all for being prepared ahead of the upcoming Easter long weekend.

But as a single mum, the Celebrity Apprentice star and former Biggest Loser trainer knows that sometimes not everything goes to plan.

People often worry about overdoing it on the treats over Easter and food guilt is still something many struggle with. So we spoke to Michelle about what her average daily diet looks like, as well as her tips for balance over the holiday period.

Breakfast

Avocado on sourdough, lemon and chilli flakes with a poached egg and wilted spinach.

Lunch

Lunch is usually leftovers from dinner the night before. Sometimes it is chicken and veg or bolognese and veg. Or if there are no leftovers, it could be a massive salad bowl with chilli tuna or sardines.

Dinner

Dinner is always a variety. Spaghetti Bolognese is a usual as it's one of Axel's favourites. I always pump mine up with broccoli. I often do a chicken bake with baked veg as well. Tonight we are having a mango salad and barramundi.

Omelettes are another favourite go-to. I love that it's meat-free and you can load it with veg. 

During winter, my slow cooker is on the bench and working overtime as it allows me to batch cook stews, casseroles, soups etc. No matter what we make, our veggies are the rockstars!

Snacks

I don't usually snack in the morning. I tend to eat breakfast late because I train in the morning, right after dropping my son to school. I do not like training with a full belly.

I'm not a big snacker. My main meals tend to hold me until the next one. If I make a snack, it's very simple: an apple, a cut-up orange, a banana, a rice cracker with peanut butter.

Will your diet change at all over the Easter weekend?

Yes it will as we are travelling and staying away from home. This means I will simply have to think ahead a bit more – planning is the key here.

What can I pre-pack in the car? Where will we be that day? Will there be options that we will want? If not, what will I sort the night before?

Once you get into a rhythm, it's not a big deal – plus it saves money and health.

Tips for balance and enjoying things without guilt?

No guilt! We simply enjoy it and partake.

I use the same principles that I learnt from when I was Axel's age of six (it was the 70s), there was no fast food and we had no money, but we had an egg hunt, ate and saved our eggs and enjoyed hot cross buns which mum made. And that was enough.

As a mum, does your son eat what you do?

Yup! We pretty much eat the same. Sometimes he might have more carbohydrates than me, my portions are slightly bigger than his (although I can see that changing!).

However, Axel only knows what he knows! And what he knows is what we eat. He said to me the other day that school served up a lunch that had salad and whilst no one at his table chose salad, he did because he knew I would want him to do that. And, he was happy to do so. Go, my dude!!
