Edible insects are the new food frontier

Forget kale - cockroaches and crickets are the new food frontier for Adelaide researchers in an insects-as-food trial.

The University of Adelaide will test insect-based foods in the wake of concerns over food security and the search for alternative forms of protein in developing countries.

"There has been growing interest in eating insects with nations around the world being encouraged to consider edible insects as an emerging agricultural industry," associate professor Kerry Wilkinson says.
