Today is National Egg Day so to celebrate, here are some of Sydney chef, Guy Turland's favourite recipes to jazz up any egg dish.

Breakfast Burrito

Makes one

Sunny Queen Farms Protein Bites x 5-6 Bites

Aioli x 1 tbs

Hot Sauce x 1 tsp

Tasty Cheese x 2 slices

Black beans x 1 tbs

Tortillas x 1

Breakfast burrito

Breakfast burritos are filling and delicious.

Method

Pop your Sunny Queen Farms Protein Bites in the oven or air fryer as directed.

Zap your tortilla in the microwave for 15 seconds (this makes it easier to fold).

Smear your aioli on the tortilla.

Spoon your black beans & layer your tasty cheese.

Take your Sunny Queen Protein Bites and layer them on the wrap.

Drizzle with hot sauce to your desired heat level.

Roll the sides of your burrito in and tuck the ends.

Place the burrito in a sandwich press and toast until golden.

Cut in half and serve.

Chocolate Pudding

Hard boiled Sunny Queen Farms free-range eggs x 6

Cocoa powder x 1 tbs

Honey x 1-2 tbs

Coconut milk x 1/2 cup

White chocolate, custard and raspberry desserts

You could also try using white cocoa powder for this recipe. 

Method

Hard boil 6 x Sunny Queen Farms free-range eggs.

Peel from shells & place in blender.

Add cocoa powder, honey & coconut milk in to a blender.

Blend until smooth.

Pour pudding mix into two cups or jars and place in fridge for at least 30 minutes (overnight is ideal).

To serve add a handful of raspberries & enjoy.

Sheet Pan Eggs

Eggs x 6 x Sunny Queen Farms free range eggs

Feta x 2 tbs

Avocado x 1 avocado

Coriander x 1/2 bunch

Cherry Tomatoes x 1 punnet

Serves 4-6 people

Chorizo, tomato and feta omelette

Fetta and cherry tomatoes are a great flavour accompaniment to baked eggs.

Method

Preheat your oven to 180 degrees.

Spray oven-safe baking tray with olive oil.

Crack 6 x eggs so the eggs are covering the base of the tray.

Scatter cherry tomatoes and feta on top.

Add sheet pan or tray to the oven and bake for around 10-12 minutes (check regularly to make sure your eggs are cooked to your desired consistency).

Remove from the oven and allow to cool slightly.

Add fresh sliced avocado, dollops of hommus & fresh coriander.

Top with salt & pepper to taste.
