Family and friends of Gold Coast woman Shelsea Schilling have gathered to see the 20-year-old laid to rest as police continue to investigate her death.

Ms Schilling and her ex-boyfriend Bronson Ellery, also known as "Lizard Man" because of his facial tattoos, were found dead in a Southport unit earlier this month.

Her mother, Bonnie Mobbs, joined mourners for the service in Parkwood on Monday afternoon.

Mrs Mobbs remembered Shelsea, who was weeks away from celebrating her 21st birthday, as an "amazing daughter and best friend".

She has questioned why police have not charged several witnesses who stood by as Shelsea was attacked.

Ellery, a former bikie, allegedly wrote a letter apologising to Ms Schilling's family for killing their daughter.

"I loved her," he wrote, according to Mrs Mobbs.

Mrs Mobbs said her daughter was kind and trusting and the service was to "celebrate her beautiful life".
