A man who cornered a young girl in a Sydney dance studio's toilet before choking her into submission and raping her, filmed the attack and then turned his knife on her rescuers, court documents allege.

Anthony Peter Sampieri, 54, was charged on Sunday with holding the seven-year-old girl captive in the bathroom of a Kogarah dance studio, where detectives say he sexually assaulted her on November 15.

Court documents state he choked the girl in order to prevent her resisting the sexual assault and filmed indecent acts before other adults burst in to rescue the victim after 15 minutes.

Sampieri allegedly stabbed Nicola Gilio in the abdomen when he came to the seven-year-old's aid before others subdued the assailant and police were called.

Sampieri was hospitalised due to injuries sustained during his apprehension and remained under police guard for more than a week.

But doctors on Sunday deemed him fit and he was charged with a string of offences at Maroubra Police Station.

The charges include raping a child under 10, aggravated kidnapping, choking, producing child abuse material and two counts of wounding with intent.

A tired-looking Sampieri - wearing prison greens and with two black eyes - appeared via video link on Monday in Waverley Local Court, where his barrister, Ken Buckman, did not apply for bail and it was formally refused.

An application to collect forensic material from Sampieri was approved the day after he was taken to hospital, magistrate Lisa Stapleton noted.

Mr Buckman said his client consented to the procedure.

Court documents also reveal his address, a street in Kogarah, is a few hundred metres from multiple public schools.

Sampieri is scheduled to next appear in Sutherland Local Court on January 23.
