Two men will face court over a bashing that has left a Sydney pub manager in hospital with a fractured skull, jaw and collarbone.

Police say the 27-year-old man was assaulted outside the Keighery Hotel in Auburn just before 7pm on Sunday, and left on the footpath with serious head injuries.

The man - named in media reports as Tony Pearson - was in a serious but stable condition at Westmead Hospital on Monday after undergoing emergency surgery.

Two men aged 20 and 23 were arrested in Lidcombe and Auburn on Monday morning and taken in for questioning.

They were charged on Monday night with reckless grievous bodily harm in company.

The pair will face Burwood Local Court on Tuesday.

Detectives say they expect to speak to a third man "who may have been present at the location around the time of the assault" later this week.
